Back to me..

These days Im going through somewhat of a “burn out”..

Ive been trying for quite a while now to build this humanitarian project ,while parallel Ive been working on building a better structure for my own creative work ..There`s been a whole lot of pushing and shoving..I can tell you that much..and it`s currently taking it`s toll on me..

Things have come to a halt,as a small pause is needed..a blessing in disguise you might I have managed to find the greatest solace back  where it all began..for down to earth Handwork,which I have long neglected ,taking care of so many other things and people..a return which allows me to re-appreciate my base,my truth,my inner being.

I am enjoying this beautiful process of creation,holding within it the gifts of patience ,acceptance and perseverence,and am looking forward to see how I will be able to put all these pieces of my puzzle back together again in a  balanced harmony..

Whilst still in Egypt shalll we stop and taste something exquisite asides from enjoying the view..?

Ive written already about one of the most famous staple foods of Egypt,Foul Medammes.Well,this is it`s cousin..The base is the same Broad(Fava) “Foul” bean,but sold split and peeled. As such,its preparation takes much less time ,but still contains its high energy potent.

It resembles the Houmous a bit as it is blended into a similar spread,but the flavour is richer,and consistency is heavier.I personally find it wins over it`s brother the houmous by far,but dont tell any houmous lover,my life may be in danger.. 🙂


250 gr.Split fava beans-soaked the night before

2+ 2 Onions

1 clove Garlic

2 tbs approx.Olive oil


Dried Naana(Mint)leaves

*Dried Molokhiya (optional)- A special herb which deserves a post in itself and I promise to do so! 🙂



Fresh Parsely leaves/Coriander

Rinse the soaked beans and place in a pot with plenty of fresh water

Place into the pot with the beans 2 onions cut into quarters

1 large Garlic clove coarsely chopped,a bunch of Parsley leaves/and or Coriander leaves.

Bring to a boil and cook on low heat for about 1.5-2 hrs until soft.

Strain for water as much as possible,blend and return to heat for 5 minutes to remove excess water.

Add salt,pepper,other spices+olive oil to smoothen paste

Saute thin slices  of 1-2 onions

Garnish the spread with these onion slices ,chopped Parsley/coriander

 Sprinkle some Paprika for a final touch
